Whether we know it or not, we all have implicit biases when it comes to food. I first realized some of my own at a young age, hearing about my mom’s favorite ice cream flavor: cheese. Not mascarpone or cream-cheese ice cream, but bright-orange cheddar cheese ice cream. Although it was a standard in my mom’s home country, I thought it to be an odd, grimace-inducing flavor. Until my mom posed a question—“But you like cheesecake, don’t you?” It opened my eyes to a world of possibilities with other cheeses and dairy products, like the fact that the same ricotta that stuffs lasagna fills a sweet cannoli. Or that the same thick, cheese-like yogurt used as a savory dip can be flipped into sweet breakfast with fruit. Burrata on a salad is great, but have you ever had it as an ice cream flavor with a milky pistachio spread swirled through it? My favorite melty, stretchy cheese situation isn’t found between two tortillas or in a folded slice of pepperoni pizza, but in a Middle Eastern dessert underneath buttery strings of pastry soaked in perfumy syrup. This chapter is an ode to all of it.
